  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied pecans, roughly chopped

For the Dressing

  • 1/3 cup olive oil Do not substitute for best flavor
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced shallot
  • Salt and pepper to taste

Preparation

  • Add salad ingredients to a large bowl.
  • Begin by placing the mixed spring greens into a large mixing bowl.

Dressing

  • Whisk together all dressing ingredients in a small bowl until smooth.
  • Combine the olive oil, honey, Dijon mustard, apple cider vinegar, minced shallot, and a dash of salt and pepper.
  • Whisk vigorously until glossy and smooth.

Assembly

  • Drizzle dressing over salad to taste.
  • Slowly drizzle the dressing over the mixed greens.
  • Toss gently to coat and serve immediately.

Notes

Store leftovers in an airtight container, keeping greens separate from dressing to prevent wilting. Consider breaking down components into individual storage containers.
