Ingredients
  

For the Chai

  • 1 cup water
  • 2 cups milk (or a plant-based alternative) Any milk or plant-based alternative can be used.
  • 1 tablespoon black tea leaves (or 2 black tea bags)
  • 2 tablespoons brown sugar Adjust to taste.
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground nutmeg
  • a pinch ground black pepper

For the Whipped Cream

  • 1/2 cup heavy cream Best when prepared fresh.
  • 1 tablespoon honey
  • 1/4 teaspoon spice mix (prepared from above) Reserved for whipped cream.

Instructions
 

Create Your Spice Mix

  • In a small bowl, mix together the cinnamon, cloves, ginger, cardamom, nutmeg, and black pepper. Set aside 1/4 teaspoon for the whipped cream.

Brew the Chai

  • In a saucepan, combine the water, black tea leaves, brown sugar, and the remaining spice mix. Heat gently over medium heat until it starts to simmer.
  • Reduce the heat to low and stir in the milk. Let steep for 5 minutes.

Prepare the Whipped Cream

  • Strain the chai into mugs to remove the tea leaves and spice sediments.
  • In a mixing bowl, whisk the heavy cream, honey, and reserved spice mix until soft peaks form.
  • Spoon or pipe the whipped cream over the chai latte and sprinkle with cinnamon or nutmeg if desired.

Notes

Serve in clear glass mugs for a festive look and offer extra spices for customization.
