Chocolate Strawberry Yogurt Clusters

Ingredients
  

Main Ingredients

  • 1.5 cups chopped strawberries Fresh strawberries, chopped
  • 1 cup plain Greek yogurt Use full-fat for creaminess
  • 1 tablespoon honey Adjust to taste for sweetness
  • 1 teaspoon vanilla extract Pure vanilla extract preferred

Coating

  • 1 cup semi-sweet chocolate chips Melt for dipping
  • 2 tablespoons coconut oil For melting with chocolate

Instructions
 

Preparation

  • Mix the chopped strawberries, plain Greek yogurt, honey, and vanilla extract in a large bowl until thoroughly combined.
  • Using a spoon or cookie scoop, form scoops of the yogurt mixture (about 2 tablespoons each) onto a parchment paper-lined baking sheet.

Freezing

  • Place the baking sheet in the freezer and let the clusters freeze until completely solid, about 1-2 hours.

Chocolate Coating

  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15 or 30-second intervals, stirring in between, until melted and smooth.
  • Remove the frozen yogurt clusters from the freezer and dip each into the melted chocolate, coating thoroughly.
  • Place the chocolate-coated clusters back on the parchment paper and sprinkle with sea salt if desired.
  • Return the coated clusters to the freezer for a few more minutes to harden the chocolate.

Serving

  • Once firm, serve the Chocolate Strawberry Yogurt Clusters directly from the freezer, arranged on a platter or in cups.

Notes

Store any leftovers in an airtight container in the freezer for up to two weeks. Allow to sit out for five minutes before enjoying to soften slightly.
