Chipotle Sauce with Garlic and Sour Cream

Ingredients
  

For the sauce

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 pieces chipotle peppers in adobo sauce About 2 peppers.
  • 2 cloves garlic Mincing or roasting is acceptable.
  • 1 tablespoon fresh lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt To taste.
  • 1 tablespoon olive oil Optional for roasting garlic.

Preparation

  • Gather all your ingredients. If desired, roast the garlic by peeling it, drizzling with olive oil, wrapping it in foil, and baking at 400°F (200°C) for 10-15 minutes until soft.
  • In a blender, add sour cream, mayonnaise, chipotle peppers, garlic (minced or roasted), lime juice, smoked paprika, cumin, and salt.

Blending

  • Blend the mixture until smooth. If you prefer a thinner consistency, add a little water or more lime juice.

Chilling

  • Taste the sauce and adjust spices if necessary. Chill in the fridge for at least one hour to let flavors meld. Serve with your favorite dishes.

Notes

Store the sauce in the fridge for up to a week or freeze for up to three months. To refresh after freezing, thaw in the fridge and reheat briefly in the oven or air fryer.
