  • 1/2 cup 1/2 cup peanut butter or almond butter Choose your preferred nut butter.
  • 1/2 cup 1/2 cup brown sugar
  • 1/4 cup 1/4 cup honey or maple syrup Maple syrup for a vegan option.
  • 1 tsp 1 tsp vanilla extract
  • 1/2 tsp 1/2 tsp baking soda
  • 1/4 tsp 1/4 tsp salt
  • 1/2 cup 1/2 cup chocolate chips Dark chocolate chips can be used for a richer taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a food processor, combine the drained and rinsed chickpeas, peanut butter, brown sugar, honey, vanilla extract, baking soda, and salt. Blend until smooth, about 1-2 minutes.
  • Stir in the chocolate chips.
  • Scoop portions of cookie dough onto a parchment-lined baking sheet, leaving space between each scoop.

Baking

  • Bake for 10-12 minutes, watching for a light golden color around the edges.
  • Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For added indulgence, pair cookies with ice cream, fresh fruit, or drizzle with chocolate sauce. Store in an airtight container in the fridge for up to one week or freeze for up to three months. To restore crunchiness, reheat in the oven or air fryer.
