  • 2 tbsp oil peanut oil or vegetable oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1- inch ginger grated
  • ½ cup smooth peanut butter natural preferred
  • 1 cup coconut milk
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp honey or brown sugar
  • 1 tbsp lime juice or vinegar
  • ½ tsp chili flakes or sriracha optional, for heat
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp turmeric
  • ½ cup chicken broth adjust for sauce consistency
  • Salt and pepper to taste

Garnish & Serving Suggestions

  • Chopped peanuts
  • Fresh cilantro
  • Lime wedges
  • Jasmine rice brown rice, or naan

Instructions
 

Prepare the Chicken

  • Cut the chicken into bite-sized pieces and season with salt and pepper.
  • Heat oil in a pan over medium heat and brown the chicken on both sides (about 4-5 minutes). Remove and set aside.

Sauté the Aromatics

  • In the same pan, add chopped onions and sauté until softened.
  • Add minced garlic and grated ginger, cooking until fragrant (about 1 minute).

Make the Peanut Butter Sauce

  • Stir in peanut butter, coconut milk, soy sauce, honey, lime juice, and spices.
  • Mix well and let the sauce simmer for 2-3 minutes. Add chicken broth if the sauce is too thick.

Simmer with Chicken

  • Return the cooked chicken to the pan, coating it in the sauce.
  • Let it simmer for 8-10 minutes until the chicken is fully cooked and the sauce is creamy.

Serve & Enjoy

  • Garnish with chopped peanuts and cilantro.
  • Serve with rice, noodles, or flatbread.
