  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1/2 cup butter For the roux.
  • 1/3 cup flour For thickening the filling.
  • 2 cups chicken broth Low-sodium recommended.
  • 1/2 cup milk or heavy cream For a creamy texture.
  • 1 pie crust buttery flaky crust Homemade or store-bought.
  • to taste salt, pepper, garlic powder, thyme For seasoning.

Instructions
 

Prepare the Filling

  • Preheat the oven to 400°F (200°C).
  • In a large pan, melt butter over medium heat. Add diced onions, carrots, and celery, and sauté until softened.
  • Sprinkle flour over the vegetables and stir to form a roux.
  • Gradually add chicken broth and milk, stirring constantly until thickened.
  • Stir in shredded chicken, peas, and seasonings to taste.

Assemble the Pie

  • Roll out pie crust and place it in a greased pie dish.
  • Pour in the prepared filling.
  • Cover with a second layer of pie crust, sealing the edges and cutting slits for steam to escape.
  • Brush the top crust with an egg wash (optional).

Bake

  • Bake in preheated oven for 35-40 minutes or until crust is golden brown.
  • Let it rest for 10 minutes before slicing and serving.

Notes

For a golden crust, use cold butter and do not overwork the dough. Store leftovers in an airtight container in the fridge for up to 4 days.
