  • 1 medium bell pepper, sliced
  • 1 medium onion, sliced
  • 2 teaspoons fajita seasoning
  • 1 tablespoon olive oil
  • cooked rice or quinoa
  • to taste fresh cilantro, for garnish
  • 2 lime wedges, for serving

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat (about 350°F). Add 1 sliced onion and 1 sliced bell pepper. Sauté for about 4-5 minutes until they are soft.
  • Next, add 1 pound of diced chicken breast and 2 teaspoons of fajita seasoning to the skillet. Cook for about 6-8 minutes, stirring occasionally, until the chicken is fully cooked (it should reach an internal temperature of 165°F).
  • Now, divide cooked rice or quinoa into meal prep containers. Top each with the chicken and vegetable mixture. For a fresh finish, garnish with chopped fresh cilantro. Serve with lime wedges on the side for a zesty kick.

Notes

You can store Chicken Fajita Meal Prep Bowls in the fridge for up to 4 days. If you want to keep them longer, freeze them for up to 3 months. To reheat, use an air fryer or oven at 350°F for about 10-15 minutes. Consider using pre-chopped vegetables or rotisserie chicken for quicker prep times.
