  • 2 cups rotisserie chicken, shredded Can use leftover chicken.
  • 1.5 cups Swiss cheese, shredded Can substitute with cheddar for a different flavor.
  • 2 cups cooked pasta (e.g., penne or rotini) Make sure it’s cooked and drained.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Topping

  • 1 cup panko breadcrumbs
  • 2 tablespoons butter, melted For a crunchy topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, cooked pasta, Swiss cheese, heavy cream, chicken broth, Dijon mustard, garlic powder, salt, and pepper. Mix until creamy.
  • Transfer the mixture to a greased 9x13 inch baking dish.

Topping

  • In a small bowl, mix panko breadcrumbs with the melted butter until well coated.
  • Sprinkle the breadcrumb mixture evenly over the casserole.

Baking

  • Place the casserole in the preheated oven and bake for 30-35 minutes, until the top is golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

For serving, scoop portions into bowls and add sides like salad or garlic bread. Leftovers can be stored in the refrigerator for 3-4 days or frozen for longer storage. For variations, add steamed broccoli, spinach, or diced ham.
