Preparation

  • In a bowl, mix the shredded chicken, chopped romaine, Caesar dressing, and Parmesan cheese.
  • Season with salt and pepper.

Assembly

  • Lay out the tortillas and divide the chicken mixture among them.
  • Roll up each tortilla tightly, then slice in half to serve.

Cooking Chicken (if starting raw)

  • Pat the chicken pieces dry and season lightly with salt and pepper.
  • Sear on medium-high heat for 4 to 5 minutes per side until golden and cooked through.
  • Let rest for 5 minutes, then shred with two forks.

Warm Tortillas

  • Warm the tortillas gently in a dry skillet over medium heat for 10 to 20 seconds per side, or microwave wrapped in a damp paper towel for 15 seconds.

Final touches

  • For extra texture, grill the wrapped tortilla seam-side down on a hot skillet for 1 to 2 minutes per side.
  • Slice on the diagonal and serve immediately.

Notes

Store assembled wraps for up to 24 hours in the fridge, keeping the chicken mixture and tortillas separate for longer storage. To refresh leftovers, add fresh romaine and a squeeze of lemon.
