Ingredients
  

For the Chicken Patties

  • 1 pound ground chicken Swap for turkey if preferred.
  • 1/4 cup white onion, shredded Moisture squeezed out.
  • 2-3 tablespoons cold butter, shredded Fresh butter is recommended.
  • 2 tablespoons parmesan cheese, grated
  • 2 tablespoons mayonnaise
  • 2 teaspoons garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon lemon zest Add more for a tangy lift.
  • to taste kosher salt and ground black pepper

For the Tacos

  • 3 cups romaine lettuce, chopped
  • 1/4 cup Caesar dressing More for serving.
  • 1/4 cup parmesan cheese, shaved
  • 1 tablespoon butter
  • 6 street taco tortillas Ensure they are small-sized tortillas.
  • 6 provolone cheese slices Use room temperature for easier melting.
  • 1/2 cup croutons, crushed Can use seasoned croutons for extra flavor.

Instructions
 

Preparation

  • Put all the burger ingredients in a large bowl and mix to fully combine. Press with your hands until the mix feels even and glossy.
  • Divide into 6 equal-sized balls on a plate and place in the freezer for 15-30 minutes.
  • In a separate bowl, combine the romaine lettuce, Caesar dressing, and shaved parmesan. Set aside.

Cooking

  • Preheat flat top griddle to medium-high heat with 1 tablespoon of butter.
  • Place the burger balls on the hot cooktop with a parchment sheet on top and flatten with a burger press.
  • Season with salt and pepper and cook for about 40 seconds, then flip and place a slice of cheese on each patty.
  • Add the tortillas to the cooker next to the patties and let cook for 1-2 minutes.
  • Open the lid and flip the tortillas, then carefully transfer the cooked patties onto the tortillas.

Assembly

  • Add chopped Caesar salad, crushed croutons, and additional Caesar dressing to the tacos as desired.
  • Serve warm with optional sides like lime wedges or pickled vegetables.

Notes

For storage, keep patties and salad separate in an airtight container. Patties can be reheated gently in a skillet. Avoid freezing salad or dressing.
