  • 1 pound chicken breast, cut into bite-sized pieces You can use pre-cooked rotisserie chicken if short on time.
  • 3 tablespoons olive oil Used for sautéing.
  • 1/4 cup yellow onion, diced Sauté until translucent.
  • 1 cup extra-long grain rice, uncooked Cook according to package instructions.
  • 1 14.5 oz can diced tomatoes, drained
  • 1 15 oz can black beans, drained and rinsed Can substitute with other beans if preferred.

Preparation

  • In a skillet, heat the olive oil over medium heat until it shimmers.
  • Add the diced onions and sauté until translucent, stirring occasionally.
  • Add the chicken pieces to the skillet. Cook until browned and fully cooked, about 6-8 minutes.
  • Meanwhile, in a separate pot, cook the rice according to package instructions.
  • Once the rice is cooked, mix in the drained diced tomatoes and black beans. Stir until well combined and glossy.

Serving

  • Serve the chicken over the rice and bean mixture. Top with fresh cilantro, avocado slices, or a dollop of sour cream as desired.

Notes

Leftovers stay fresh in the fridge for about three days. Reheat in the microwave or stovetop with a splash of water or broth to keep the rice moist. This dish tastes even better the next day.
