  • 1 cup pumpkin puree
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Mix-Ins

  • 1 cup chocolate chips add more if desired

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  • Mix in the pumpkin puree, egg, and vanilla extract. Stir until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry mixture to the wet mixture and mix gently until just combined.
  • Fold in the chocolate chips.

Baking

  • Drop tablespoon-sized balls of dough onto a lined baking sheet, leaving space between each ball.
  • Bake in the preheated oven for 10-12 minutes until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week or freeze for 2-3 months. Reheat in a 350°F oven for about 5 minutes.
