Ingredients
  

For the Cookie Dough

  • 1/2 cup unsalted butter, softened 1 stick
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Pecan Filling

  • 3/4 cup chopped pecans, toasted
  • 1/3 cup brown sugar
  • 1/4 cup corn syrup (or maple syrup)
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.

Make the Cookie Dough

  • In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  • Add the egg and one teaspoon of vanilla extract, then beat until smooth.

Mix Dry Ingredients

  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Slowly add the dry mixture to the wet ingredients, stirring until just combined.

Scoop and Shape the Dough

  • Roll the dough into 1.5-inch balls and place them on the prepared baking sheet.
  • Make an indentation in the center of each dough ball.

Chill the Dough

  • Chill the cookie dough in the fridge for about 15 minutes.

Make the Pecan Filling

  • In a small bowl, mix together the chopped pecans, brown sugar, corn syrup (or maple syrup), melted butter, half a teaspoon of vanilla extract, and a pinch of salt until well combined.

Fill the Cookies

  • Remove the chilled dough from the fridge and place one teaspoon of the pecan filling into the center of each cookie.

Bake the Cookies

  • Bake for about 10–12 minutes until the edges are golden and the filling is bubbly.

Cool and Serve

  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days, or freeze for up to 2 months. Reheat in an oven at 350°F for 5 minutes.
