Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Make sure the butter is softened, not melted.
  • 1 cup brown sugar, packed Use packed brown sugar for better moisture.
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup chocolate chips

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, mix the flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, blending well.
  • Stir in the oats and chocolate chips.

Baking

  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To keep cookies fresh, store in the fridge for up to one week or freeze in an airtight container for up to three months. Warm them in the oven or air fryer to revive their chewiness.
