Wet Ingredients

  • 1 cup pumpkin puree
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Extras

  • 1 cup chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine pumpkin puree, brown sugar, granulated sugar, softened butter, egg, and vanilla extract. Mix until smooth.
  • In another bowl, whisk together all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
  • Gradually combine the dry ingredients into the wet mixture, mixing until just combined.
  • Gently fold in the chocolate chips.
  • Using a tablespoon, drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie.
  • Bake for 12-15 minutes or until the edges are set.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

For added enjoyment, serve with vanilla ice cream, fresh fruit, chocolate sauce, or whipped cream. Store leftovers in an airtight container for up to a week.
