  • 2 cups grated carrots
  • 2 cups chopped apples
  • 1/2 cup raisins (optional)
  • 1/4 cup chopped nuts (such as walnuts or pecans)

Dressing

  • 1/2 cup plain yogurt (or mayonnaise)
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large bowl, combine grated carrots, chopped apples, raisins, and nuts.
  • In a separate small bowl, whisk together yogurt, honey, lemon juice, salt, and pepper.
  • Pour the dressing over the carrot-apple mixture and toss gently to combine. Serve immediately or chill in the refrigerator for an hour before serving.

Notes

Best eaten fresh, but if you have leftovers, store them in an airtight container in the fridge for 2-3 days. Keep the dressing separate if storing to avoid sogginess.
