Cooking the Bacon

  • Start by cooking the bacon using the oven or stovetop until crispy. Set aside and reserve about ¼ cup for garnish.

Preparing the Pot

  • Preheat a medium Dutch oven over medium-high heat and add the tallow or bacon grease to coat the pot.

Searing the Meat

  • Add the sirloin chunks to the pot and sear them for 2-3 minutes on each side until browned. Remove and set aside.
  • Add the ground beef into the pot, combined with optional spices like cumin or chili powder, and cook for 15 minutes, breaking the meat into smaller pieces.

Combining and Simmering

  • Return the seared sirloin to the pot, pour in the beef broth, and stir well.
  • Bring to a boil then reduce heat to let it simmer uncovered for about 30 minutes.

Finishing Touches

  • Crumble the reserved crispy bacon into the chili, keeping some for garnish if desired.
  • Taste and adjust seasoning with Kosher salt as needed.

Serving

  • Serve hot, allowing everyone to customize their bowls with garnishes like shredded cheese, sour cream, or additional bacon.

Notes
