Ingredients
  

For the crust

  • 1 package graham crackers Crushed into crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar

For the cheesecake filling

  • 2 packages cream cheese, softened (8 oz each)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced
  • 1 cup caramel sauce
  • 1 teaspoon ground cinnamon For sprinkling on top

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Combine graham cracker crumbs, melted butter, and 2 tablespoons sugar in a bowl and mix until well combined.
  • Press the mixture into the bottom of a greased 9×13 inch baking dish.
  • In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth.

Mixing

  • Add eggs one at a time, mixing until just combined.
  • Fold in diced apples and caramel sauce.

Baking

  • Pour the cheesecake mixture over the crust and spread evenly.
  • Sprinkle with cinnamon.
  • Bake for 30-35 minutes or until set.

Cooling

  • Allow to cool, then refrigerate for at least 2 hours before cutting into bars.

Notes

Cut into squares for serving and garnish with extra caramel sauce, whipped cream, or vanilla ice cream if desired. Store leftovers in an airtight container in the refrigerator for about a week.
