  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cups mini chocolate chips
  • 0.25 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Filling Ingredients

  • 0.5 cups ricotta cheese
  • 0.25 cup powdered sugar
  • 0.25 teaspoon cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract, mixing until well incorporated.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • In a separate bowl, mix the ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips until well combined.
  • Roll the dough into 1-inch balls, and then roll each ball in a blend of cinnamon and granulated sugar.
  • Place the balls on the prepared baking sheet and flatten each slightly with the bottom of a glass.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Assembly

  • Once cooled, spread a teaspoon of the creamy ricotta filling on the flat side of one cookie, then gently sandwich it with another cookie.

Notes

Store in an airtight container at room temperature. Cookies can be frozen unfilled for up to three months, then filled when ready to enjoy.
