  • 1 cup Rice Medium-grain white rice is recommended
  • 2 medium Bell peppers Diced, any color
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 2 cups Chicken broth Use warm broth for quicker cooking
  • 2 tablespoons Olive oil Or real butter for richness
  • 1 teaspoon Cajun seasoning Adjust to taste

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced smoked sausage and cook until browned, stirring occasionally for even color.
  • Add diced onion and bell peppers; sauté until softened, about 4 to 6 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add rice and Cajun seasoning, stirring to coat the rice grains.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat, cover, and simmer for about 20 minutes.
  • Season with salt and pepper to taste before serving.

Notes

Serve garnished with chopped green onions or lemon for brightness. Pairs well with a green salad and bread. Store leftovers in an airtight container for up to three days.
