Ingredients
  

For the Salad

  • 3 lbs red potatoes, cut into bite-sized pieces or small, waxy potatoes
  • 3-4 stalks celery, chopped
  • 6 pieces hard boiled eggs, chopped
  • 2 pieces green onions, sliced

For the Dressing

  • 1.5 tsp paprika (smoked paprika if you have it)
  • 0.25 tsp cayenne (more or less for spice preference)
  • 0.5 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.5 tsp thyme
  • 0.5 tsp oregano
  • 1.33 c mayonnaise
  • 0.33 c sour cream
  • 1 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 0.5 tsp sea salt
  • 0.5 tsp cracked pepper

Instructions
 

Boiling the Potatoes

  • Add the cut potatoes to a pot and pour in water just to cover the potatoes. Add up to 1 teaspoon of salt to the water when it begins to boil. Boil for about 12-15 minutes until they are soft enough for a fork to pierce them. Drain and set aside, allowing them to cool slightly.

Preparing the Dressing

  • In a bowl, whisk together all of the dressing ingredients. Adjust the seasoning to your taste, perhaps adding more paprika or a touch of hot sauce for that classic Cajun kick.

Combining Ingredients

  • Once the potatoes have cooled enough to touch, add them to a large bowl alongside the eggs, celery, and green onions. Toss everything together gently with about two-thirds of the Cajun dressing to coat evenly.

Chilling

  • Cover the bowl and chill in the refrigerator for at least 30 minutes before serving, but it can be left for up to 24 hours to deepen the flavors. Just before serving, fold in the remaining dressing and garnish with freshly chopped parsley and a sprinkle of paprika.

Storing Leftovers

  • Store leftovers in an airtight container in the fridge for up to 5 days. The flavors will continue to meld together, making it taste even better the next day!

Notes

Consider adding a dash more cayenne if you love cozy spice or using fresh herbs for a burst of flavor. You can substitute Greek yogurt for sour cream for a lighter version or use a plant-based mayo for a dairy-free option. Save time by using pre-boiled eggs or store-bought potato salad if you are in a hurry.
