Cajun-Inspired Cheesy Pasta

Ingredients
  

Pasta and Sausage

  • 12 oz Bowtie pasta Can substitute with penne or rotini.
  • 1 lb Andouille sausage Can substitute with chicken, turkey, or plant-based sausage.

Sauce and Seasoning

  • 14.5 oz Diced tomatoes (canned) Canned tomatoes work perfectly.
  • 2 cups Cheese (mozzarella or cheddar) Feel free to mix different cheeses.
  • 1 tbsp Cajun seasoning
  • to taste Salt
  • to taste Pepper

Instructions
 

Pasta Preparation

  • Boil water in a pot and cook bowtie pasta according to package instructions until al dente. Drain and set aside.

Sausage Cooking

  • In a large pot, heat to medium and add sliced andouille sausage. Cook until browned and crispy.

Combine Ingredients

  • Add the diced tomatoes and Cajun seasoning to the pot with the sausage. Mix and cook for a couple of minutes.
  • Stir in the cooked bowtie pasta along with the cheese until melted and creamy.
  • Season with salt and pepper to taste.

Serving

  • Serve warm in bowls, optionally garnished with fresh herbs and accompanied by garlic bread or a light salad.

Notes

Store leftovers in a tightly sealed container in the fridge for up to three days. Reheat in the microwave or on the stove.
