Ingredients
  

For the Graham Crackers

  • 12 pieces graham crackers (broken in half) Use standard graham crackers.

For the Peanut Butter Mixture

  • 1.5 cups creamy peanut butter Smooth texture is key.
  • 0.5 cup butter (1 stick) Should be softened.
  • 2.5 cups powdered sugar Sift if necessary.
  • 1 tsp vanilla extract Adds flavor.

For the Chocolate Coating

  • 3.5 cups semi-sweet chocolate chips For coating.
  • 4 tbsp vegetable oil (divided) Used to melt chocolate.

For Drizzling

  • 1 cup peanut butter chips For the drizzle.

Preparation

  • Break each graham cracker sheet in half and place them on a lined baking sheet.
  • In a large mixing bowl, combine creamy peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until smooth.
  • Roll the peanut butter mixture into small balls about 1 inch wide and place one ball on each graham cracker square.
  • Flatten each peanut butter ball with your fingers, spreading it to the edges of the graham cracker.

Coating

  • In a microwave-safe bowl, combine semi-sweet chocolate chips and 3 tablespoons of vegetable oil. Microwave in 30-second intervals, stirring until melted and smooth.
  • Dip each graham cracker into the melted chocolate, allowing excess to run off before returning to the baking sheet.

Drizzling

  • In another bowl, combine peanut butter chips and the remaining 1 tablespoon of vegetable oil. Microwave in 30-second intervals until melted and smooth.
  • Drizzle the peanut butter mixture over each chocolate-coated graham cracker.

Setting

  • Refrigerate the baking sheet until the chocolate sets, then serve.

Notes

Store the Buckeye Graham Crackers in the fridge for up to a week, or freeze for a month. To reheat, preheat oven to 350°F and warm for about 5 minutes.
