  • 2 tablespoons brown sugar

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the butternut squash into 1-inch pieces.

Cooking

  • In a large bowl, toss the cubed squash with olive oil, brown sugar, salt, black pepper, and cinnamon until evenly coated.
  • Spread the squash out on a baking sheet in a single layer and roast for 25-30 minutes, until tender and caramelized. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes to avoid sogginess. Consider using pre-cut squash to save time.
