  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-Ins

  • 3 cups rolled oats
  • 1 cup butterscotch chips

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the browned butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs and vanilla extract until everything is well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, then stir in the oats and butterscotch chips.
  • Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. For freezing, shape dough into balls, freeze on baking sheet, then transfer to a bag.
