For the Cookie Dough

  • 1 cup brown sugar Using fresh butter enhances the flavor.
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract For a comforting aroma.
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

For the Brownie Layer

  • 1 cup brownie batter (prepared or from a mix) Can be homemade.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the melted butter, brown sugar, and granulated sugar until well combined.
  • Add the egg and vanilla extract, mixing until smooth.
  • Stir in the flour, baking powder, and salt until just combined.
  • Fold in the chocolate chips.
  • Drop spoonfuls of brownie batter onto the baking sheet.
  • Cover each brownie with cookie dough to create mounds.

Baking

  • Bake for 12-15 minutes or until the edges are golden and the centers look set.
  • Let cool before enjoying.

Notes

Store cookies in an airtight container for up to a week. Reheat in the microwave for a few seconds to enjoy them warm again.
