Bourbon Fig Preserves

Rich, jammy fig preserves with a splash of bourbon for depth and warmth—perfect for gifting or hoarding. Easy to make, hard to forget.

Ingredients
  

  • 2 lbs fresh figs stemmed and chopped
  • 1 cup granulated sugar
  • ¼ cup bourbon use a good-quality bourbon
  • 1 lemon juiced
  • 1 teaspoon vanilla extract optional, but recommended
  • 1 pinch salt to balance sweetness

Instructions
 

  • Wash, stem, and chop figs into small pieces.
  • Add figs, sugar, bourbon, lemon juice, vanilla, and salt to a heavy-bottomed pot. Stir to combine.
  • Bring mixture to a simmer over medium heat until sugar dissolves. Reduce to low and cook for 30–40 minutes, stirring occasionally, until thick and jammy.
  • Optional: Use an immersion blender for a smoother consistency or leave it chunky for texture.
  • Spoon hot preserves into sterilized jars, seal tightly, and let cool.

Notes

Store in the fridge for up to 3 months. For shelf-stable jars, process in a water bath for 10 minutes. For variations, try rum or brandy instead of bourbon, or swap with orange juice for a booze-free version. Honey or maple syrup can replace sugar, but adjust cooking time accordingly.
