  • 1 lb chicken thighs, cut into bite-sized pieces Can substitute with chicken breast if desired.
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar Can be swapped with honey or maple syrup.
  • 1/4 cup bourbon Can substitute with apple juice or chicken broth for non-alcoholic version.
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp vegetable oil
  • to taste salt and pepper Adjust according to preference.
  • Green onions, sliced (for garnish)

Cooking Process

  • Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
  • Add the bite-sized chicken thighs to the skillet. Season with salt and pepper and cook for about 5-7 minutes until browned and cooked through.
  • In a separate bowl, mix together the soy sauce, brown sugar, bourbon, minced garlic, and minced ginger.
  • Pour the sauce mixture over the cooked chicken in the skillet.
  • Reduce heat to low and let the dish simmer for about 10 minutes for the sauce to thicken.
  • Serve over rice or noodles and garnish with sliced green onions.

Notes

For storage, keep in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the oven or air fryer for best results. Pair the dish with ice cream, fruit salad, or a light drizzle of sweet teriyaki sauce for variety.
