Ingredients
  

For the Cod

  • 4 fillets cod fillets, about 6 oz each, 1 inch thick
  • 4 tablespoons butter For topping and greasing the dish
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • salt and black pepper to taste Salt and black pepper For seasoning the cod

For the Topping

  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped Can substitute with other fresh herbs
  • 1 teaspoon garlic powder
  • zest of 1 lemon lemon zest

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • Butter a 9x13 inch baking dish.
  • Pat your cod fillets dry with a paper towel and season both sides with salt and pepper.
  • Arrange the cod in the prepared dish with space between each piece.

Making the Topping

  • Melt the butter in a small saucepan over medium heat.
  • Remove from heat and stir in the panko, parsley, garlic powder, and lemon zest.
  • Divide the breadcrumb mixture evenly over the cod fillets and press down gently.
  • Drizzle with lemon juice and olive oil.

Baking

  • Bake for 12-15 minutes until the fish flakes easily with a fork and the topping is golden brown.
  • Let it rest for 2 minutes before serving.

Notes

Serve with fluffy rice, steamed broccoli, or a crisp salad. Store leftovers in an airtight container for 2-3 days. Reheat in the oven for a crispy topping.
