Blackstone Grilled Kielbasa and Tortellini

Main Ingredients

  • 1 lb kielbasa sausage, sliced You can use turkey or chicken kielbasa for a lighter option.
  • 1 lb cheese tortellini (fresh or frozen) Feel free to swap for spinach or meat tortellini.
  • 2 cups bell peppers, diced Use pre-chopped vegetables to save time.
  • 1 cup red onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions
 

Preparation

  • Preheat your grill to medium-high heat for 5 minutes.
  • Fill a pot with water, add salt, and bring it to a boil. Once boiling, add the tortellini and cook according to package instructions, 3-5 minutes. Drain the tortellini and set it aside.

Grilling

  • In a bowl, combine diced bell peppers, red onion, minced garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper. Toss everything to coat well.
  • Sear the sliced kielbasa on the preheated grill for 3-4 minutes until browned.

Combining and Finishing

  • Push the kielbasa to one side of the grill. Add the seasoned vegetables and grill for another 5-7 minutes until tender.
  • Now, add the drained tortellini, toss everything together, and grill for an additional 2-3 minutes. Taste and adjust seasoning as needed.
  • Remove from the grill, garnish with fresh parsley, and serve immediately.
  • Optional: Top with grated Parmesan cheese.

Notes

Store leftovers in the fridge for up to 3 days. For freezer storage, use an airtight container for up to 3 months. To reheat, place in an air fryer or oven at 350°F for about 8-10 minutes to crisp it back up. Avoid microwaving as it may make everything soggy.
