  • 1 cup black beans (canned or cooked)
  • 1 cup rice (white or brown)
  • 1 pound sausage (smoked or andouille)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Cooking Steps

  • In a large pot, cook the sausage over medium heat until it’s browned, about 5-7 minutes. Remove it from the pot and set aside.
  • In the same pot, add the chopped onion, minced garlic, and bell pepper. Sauté until soft and fragrant, about 3-5 minutes.
  • Stir in the rice, black beans, broth, cumin, paprika, salt, and pepper. Mix well.
  • Bring it to a boil, then reduce the heat, cover the pot, and simmer for about 20 minutes or until the rice is cooked and has absorbed most of the liquid.
  • After 20 minutes, stir the cooked sausage back into the pot and mix everything together.
  • Serve in bowls and garnish with fresh cilantro.

Notes

For extra flavor, you can swap the sausage for chicken, turkey, or a plant-based option. Add corn or diced tomatoes for a vegetable boost. For some heat, include diced jalapeños or red pepper flakes.
