  • 2 pounds potatoes Waxy potatoes like red or yellow work best.
  • 4 pieces hard-boiled eggs
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1 tablespoon Dijon mustard Add more for extra zing.
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • to taste Salt and pepper
  • 1 tablespoon apple cider vinegar Optional, adds tang.
  • for garnish Fresh parsley Optional, enhances flavor and presentation.

Preparation

  • Peel and chop the potatoes into bite-sized pieces, then boil in salted water until tender, about 10-15 minutes. Drain and let cool.
  • Peel and chop the hard-boiled eggs.
  • In a large bowl, combine the mayonnaise, Dijon mustard, chopped onion, chopped celery, and apple cider vinegar (if using).
  • Add the cooled potatoes and chopped eggs to the dressing and mix gently to combine.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for at least 1 hour before serving.
  • Garnish with chopped fresh parsley before serving, if desired.

Notes

Leftovers may taste even better the next day. Stir in more mayonnaise if the salad seems dry. Consider adding crumbled bacon, diced pickles, or fresh herbs for variations.
