  • 1 lb ground beef Use lean ground beef for healthier options.
  • 1 can kidney beans, drained and rinsed Any type of kidney beans can be used.
  • 1 can black beans, drained and rinsed Rinse thoroughly before adding.
  • 1 can diced tomatoes Fire-roasted for a smoky flavor, if desired.
  • 1 can tomato sauce
  • 1 medium onion, chopped Yellow or white onion works best.
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder Adjust to taste.
  • 1 teaspoon cumin
  • to taste Salt and pepper

Cooking the Chili

  • In a large pot over medium heat, add the ground beef. Cook until browned, then drain excess fat.
  • Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  • Stir in the chili powder, cumin, salt, and pepper until the beef and onions are well-coated with spices.
  • Add the kidney beans, black beans, diced tomatoes, and tomato sauce. Stir well to combine.
  • Increase the heat to bring the chili to a boil, then reduce heat to low and let it simmer.
  • Allow the chili to simmer for about 20 minutes while stirring occasionally.
  • Serve hot in bowls, optionally garnished with grated cheese, sour cream, and cilantro.

Notes

This chili can be customized with different ingredients including fire-roasted tomatoes, various bean types, or added spices for a kick. Leftovers can be refrigerated for 3-4 days or frozen for up to six months.
