  • ¾ cup packed light or dark brown sugar Brown sugar helps retain moisture.
  • ½ cup unsalted butter Ensure it's at room temperature.
  • ¾ cup all-purpose flour Can substitute half with whole wheat for healthier cookies.
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon fine salt
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Preparation

  • Prepare your workspace by lining two baking sheets with parchment paper or silicone mats.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg.
  • Using a stand mixer, beat the room temperature butter and brown sugar until light and fluffy.
  • Add the egg and vanilla to the butter-sugar mix and blend until smooth.
  • Gradually add the dry ingredients into the wet mixture on low speed.
  • Fold in the oats and butterscotch chips using a spatula.
  • Scoop uniform dough balls onto the prepared baking sheets.
  • Chill the dough in the refrigerator for about 30 minutes.

Baking

  • Preheat the oven to 350°F (175°C).
  • Bake the cookies for 13-14 minutes until they look slightly soft.
  • Cool on the baking sheets for about 10 minutes before transferring to a wire rack.
