Ingredients
  

For the crust

  • 1 cup unsalted butter, softened Use high-quality butter for best flavor.
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour, divided

For the filling

  • 4 cups chopped fresh rhubarb (about 1 lb) Fresh rhubarb is preferred over frozen.
  • 1 cup granulated sugar For filling.

  • 1/2 teaspoon ground cinnamon

For the topping

  • 1/2 cup packed light brown sugar
  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Cut into crumbs.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large mixing bowl, cream the softened butter and 1/2 cup of granulated sugar until fluffy and light in color (3-5 minutes).
  • Gradually mix in 2 cups of all-purpose flour and 1/4 teaspoon salt until just combined into a soft dough.
  • Press the dough evenly into the bottom of the prepared baking dish.
  • Bake the crust for about 15 minutes until slightly golden at the edges.

Filling and Topping

  • While the crust is baking, wash and chop the rhubarb.
  • Mix chopped rhubarb with 1 cup sugar, 1/4 cup flour and 1/2 teaspoon cinnamon; toss until well coated.
  • In another bowl, mix together brown sugar, rolled oats, and remaining 1/4 cup flour; cut in 1/2 cup softened butter until coarse crumbs form.

Final Bake

  • Once the crust is done, spread the rhubarb filling evenly over it and top with the crumbly mixture.
  • Return the dish to the oven and bake for an additional 30-35 minutes, until topping is golden and filling is bubbly.
  • Allow the bars to cool completely in the pan on a wire rack before slicing into squares.

Notes

For serving, consider adding ice cream or whipped cream, and garnish with strawberries or fresh fruit for a vibrant contrast. Store bars in an airtight container in the refrigerator for up to one week or freeze for longer storage.
