Crisp Bacon

  • Start by using a medium-sized cast iron pan. Place the diced bacon pieces in the pan over medium heat. Stir frequently until the bacon is crispy. Once done, remove the bacon from the pan and reserve it for later. Discard the bacon fat to keep the rest of the dip nice and creamy.

Make the Roux

  • In the same pan, over medium heat, add the flour and unsalted butter. Use a whisk to combine the two ingredients. Once the butter is melted, keep stirring for about three minutes to activate the roux.

Add Liquids

  • Pour in the lager beer and stir. Allow the beer to simmer for about 2 minutes, stirring often. After the two minutes, add the milk and let it simmer for an additional 2 minutes.

Add Cheese

  • Add the cream cheese and the shredded cheeses. Reduce the heat to low and stir well until the cheeses melt and blend seamlessly into the mix. This should take about 2 minutes.

Incorporate Flavor

  • Add the Dijon mustard, Worcestershire sauce, and chopped chives into the cheese mixture. Stir to combine all the flavors.

Serve

  • Sprinkle the reserved bacon over the top of your cheesy creation. Serve immediately or transfer it to a fondue pot to keep it warm. Enjoy with your choice of fresh pretzels, corn chips, or grilled sausage.

Notes

Store leftovers in an airtight container in the fridge for about 3 to 4 days. Reheat on the stove over low heat or in the microwave in short bursts. Optionally, add a splash of milk if the dip is too thick after refrigeration.
