Ingredients

  • 4 bone-in, skin-on chicken thighs about 2 lbs total
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 0.5 cup balsamic vinegar
  • 0.25 cup chicken broth
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat chicken thighs dry with paper towels.
  • In a small bowl, mix together salt, pepper, garlic powder, and paprika.
  • Rub the spice mixture evenly over both sides of the chicken thighs.
  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Sear the chicken thighs skin-side down for 5–7 minutes until golden brown. Flip and sear another 2–3 minutes.
  • Whisk together balsamic vinegar, chicken broth, honey, and Dijon mustard in a small bowl.
  • Pour the glaze into the skillet over the seared chicken.
  • Transfer the skillet to the oven and bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
  • Remove from oven, let the chicken rest for 5 minutes, and serve.

Notes

Meal prep friendly and super flavorful. Store leftovers in the fridge or freezer and reheat in the oven or air fryer to keep the skin crispy. For extra flavor, simmer the glaze for a few minutes after removing the chicken to thicken it.
