Wet Ingredients

  • 1/2 cup unsalted butter, melted Should be melted but not too hot.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract Use pure vanilla extract for best flavor.
  • 1 large egg

Chocolate Chips

  • 1 cup chocolate chips Use semi-sweet or dark chocolate chips according to preference.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together gluten-free all-purpose flour, baking soda, and salt.
  • In a large bowl, mix together melted butter, brown sugar, and granulated sugar until smooth.
  • Stir in vanilla extract and egg until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in chocolate chips.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes, until edges are golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to one week or freeze for up to three months. Reheat in the oven or air fryer at 350°F for a few minutes before serving.
