Ingredients
  

Dry Ingredients

  • 1 cup gluten free flour blend Make sure it's a suitable blend for baking.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Ensure it is at room temperature.
  • 1/2 cup brown sugar Packed.
  • 1/4 cup granulated sugar
  • 1 large egg Room temperature.
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup chocolate chips Feel free to use milk or dark chocolate.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the gluten free flour, baking soda, and salt together.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Beat in the egg and vanilla extract.
  • Gradually blend in the flour mixture until well mixed.
  • Stir in the chocolate chips until evenly distributed.
  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each.

Baking

  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra treats, serve with vanilla ice cream or top with fresh berries. Store in an airtight container in the fridge for up to a week.
