Ingredients
  

For the Sandwich

  • 1/2 piece avocado Cut in half, sliced.
  • 2 slices sourdough bread Can substitute with any hearty bread.
  • 4 slices colby jack cheese Any melting cheese can be used.
  • 3 slices bacon Cook until crispy.
  • 3 tablespoons butter For cooking the sandwich.

Preparation

  • Cut the avocado in half, scoop out the flesh, and cut it into slices.
  • Layer one slice of bread with 2 slices of cheese.
  • Place the avocado slices on top of the cheese, followed by the crispy bacon, and then add the remaining 2 slices of cheese.
  • Cap it all with the second slice of bread.

Cooking

  • Melt half the butter in a skillet over medium to medium-high heat.
  • Once the butter is melted and starts to foam, carefully place the sandwich into the skillet.
  • Cook for 2-4 minutes until the bottom is golden brown.
  • Flip over the sandwich using a spatula, add the remaining butter, and cook for an additional 1-3 minutes until toasted on the other side.

Serving

  • Serve warm and enjoy with freshly cut vegetables or chips.
  • Consider pairing with a tangy dipping sauce like spicy aioli.

Notes

Wrap leftovers tightly in foil or place in an airtight container in the fridge. Reheat in the oven for best results.
