  • 4 slices sourdough bread
  • 4 slices cheese (cheddar, Gruyere, or your choice) Use your preferred cheese combination.
  • 4 slices bacon Crispy for texture.
  • 1 large onion, thinly sliced For caramelization.
  • 2 tablespoons butter For grilling.
  • to taste salt and pepper

  • Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Save a tablespoon of the bacon fat in the skillet.
  • In the same skillet, add butter and the sliced onions. Cook over low heat until the onions are caramelized, about 15-20 minutes. Season with salt and pepper, scraping up the brown bits to add flavor.
  • Assemble the sandwiches by layering cheese, bacon, and caramelized onions between slices of bread. Press gently to stick everything together.
  • Butter the outside of the sandwiches and cook in the skillet over medium heat until golden brown and the cheese is melted, about 3-4 minutes per side.
  • Serve warm and let the sandwich sit for 1 minute before cutting to help the cheese set.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the oven for the best texture. You can also customize with different proteins, cheeses, and breads.
