Cake Ingredients

  • 4 large apples, peeled and sliced Use a mix of sweet and tart apples for best flavor.
  • 200 g sugar (divided) 50g for the apples, remaining for the batter.
  • 250 g all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 100 g unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon Add more for a spicier flavor.
  • 50 g chopped walnuts (optional) Can be replaced with pecans or omitted entirely.

Instructions
 

Preparation

  • Preheat the oven to 180°C (350°F) and grease and flour a cake pan.
  • In a large mixing bowl, combine sliced apples with 50g of sugar and cinnamon, and set aside.
  • In another bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, cream the butter and the remaining sugar until light and fluffy, then add eggs one at a time, mixing well after each addition, and stir in vanilla.
  • Gradually add the dry ingredients to the wet mixture, combining well.
  • Fold in the prepared apples and walnuts if using.
  • Pour the batter into the prepared cake pan and spread it evenly.

Baking

  • Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  • Allow to cool before serving.

Notes

Store any uneaten slices covered with plastic wrap or in an airtight container to maintain freshness.
