Preparation

  • Preheat the oven to 350°F (175°C). Ensure your oven is fully heated.
  • In a large bowl, beat together the butter and sugar until creamy, about 2-3 minutes.
  • Add the eggs and almond extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll the dough into small balls, about 1 inch in diameter, and place them on a lined baking sheet.

Baking

  • Bake for 10-12 minutes, until lightly golden. Do not over-bake; they should remain soft.
  • While the cookies are baking, mix the powdered sugar with water to make a glaze.
  • Once the cookies are cooled, dip the tops in the glaze and sprinkle with non-pareils.
  • Allow the icing to set before serving.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze cookies in a single layer, then transfer to a freezer-safe bag for up to three months.
