  • 1 cup granulated sugar
  • 1 tsp baking powder

  • 1 cup unsweetened applesauce Fresh applesauce is recommended for best flavor.
  • 2 large eggs
  • 1/2 cup vegetable oil You can use fresh butter for better flavor.
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, sugar, baking powder, and cinnamon until well combined.
  • In another bowl, mix applesauce, eggs, vegetable oil, and vanilla until smooth.
  • Combine the wet mixture into the dry ingredients; stir gently until just blended.
  • Pour the batter into the prepared pan and bake for 30-35 minutes or until golden brown.
  • Allow to cool for 10 minutes before slicing. Optional: Dust with powdered sugar before serving.

Notes

For longer storage, freeze slices of the cake wrapped tightly. It's lovely served with whipped cream or ice cream. You can add raisins or nuts for texture, or try seasonal flavors like pumpkin spice.
