  • 2 pieces boneless, skinless chicken breasts
  • 1 cup uncooked rice
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese Feel free to swap for other cheese like mozzarella.

Preparation

  • Place the chicken breasts in your crockpot.
  • Add the uncooked rice on top of the chicken.
  • Pour in the cream of chicken soup.
  • Add the chicken broth evenly over everything.
  • Cover and cook on low for 5-6 hours, or until the chicken is fully cooked.
  • Shred the chicken directly in the crockpot using two forks.
  • Stir in the shredded cheddar cheese until it melts and becomes creamy.
  • Serve warm and enjoy!

Notes

To store leftovers, let the meal cool completely, then transfer it to an airtight container. It will keep well in the fridge for about 3-4 days. Can be frozen in a freezer-safe container. For reheating, use the oven covered with foil to retain creaminess.
