Muffin Ingredients

  • 3 large ripe bananas Make sure they are very ripe for natural sweetness.
  • 2 large eggs Can substitute with 1/4 cup unsweetened applesauce.
  • 1 cup all-purpose flour May use whole wheat flour for extra fiber.

Preparation

  • Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.

Mixing

  • In a large bowl, mash the bananas until smooth. Add the eggs and whisk until well combined.
  • Gradually mix in the flour until just combined, taking care not to overmix.

Baking

  • Fill each muffin liner about ¾ full with the batter. Bake in the preheated oven for 18-20 minutes.
  • The muffins are done when a toothpick comes out clean. Allow them to cool in the tin for a few minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat at 350°F (175°C) for a few minutes.
