Ingredients
  

Pasta Ingredients

  • 1 box chickpea pasta (or preferred pasta)
  • 2 cups pasta sauce Use your favorite type of pasta sauce.

Protein and Vegetables

  • 4 pieces fully cooked chicken sausages, sliced
  • 1 bag frozen mixed vegetables You can substitute with fresh vegetables if desired.

Cooking Supplies

  • 1 tbsp olive oil For sautéing the vegetables and sausage.

Cooking the Pasta

  • Cook the pasta until it’s al dente, which usually takes about 8-10 minutes. Drain the pasta and set it aside.

Sautéing

  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add your bag of frozen mixed vegetables and the sliced chicken sausages. Sauté for about 5-7 minutes until everything is warmed through.

Assembling Meal Prep Bowls

  • Divide the cooked pasta into your meal prep containers. Top each serving with the sautéed sausage and veggies. Spoon your pasta sauce over each bowl. Let them cool, seal the containers, and refrigerate.
  • When you’re ready to eat, just reheat!

Notes

Store your meal prep bowls in the refrigerator for up to 4 days. For longer storage, you can freeze them for up to 3 months. To reheat, use an air fryer or oven to keep things crispy. Just a few minutes should do the trick.
