Ingredients
  

Pasta and Chicken

  • 8 ounces rotini pasta (uncooked)
  • 1.5 cups chicken (cooked, diced) Use rotisserie chicken for a shortcut.

Vegetables and Toppings

  • 1 head romaine lettuce (chopped) Fresh and crisp for texture.
  • 1 cup croutons Store-bought or homemade for crunch.
  • 0.5 cup Parmesan cheese (shaved) Freshly shaved cheese enhances flavor.

Dressing

  • 2/3 cup mayo For creaminess.
  • 2 teaspoons Dijon mustard
  • 2 small cloves garlic (minced)
  • 2 teaspoons lemon juice Fresh lemon juice preferred.
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon anchovy paste Or 1-2 chopped anchovies.
  • 1-2 teaspoons water Use if necessary to thin the dressing.

Instructions
 

Preparation

  • Cook the pasta according to the package instructions. Drain and rinse with cold water to stop the cooking.
  • In a large bowl, combine the pasta, chicken, chopped lettuce, croutons, and shaved Parmesan.

Dressing

  • In a jar, mix together the mayonnaise, Dijon mustard, minced garlic, lemon juice, Worcestershire sauce, anchovy paste, and water. Shake well to combine.
  • Pour the dressing over the pasta salad and toss to combine until everything is coated nicely.

Notes

Keep croutons stored separately until serving to maintain crunch. For a lighter version, substitute Greek yogurt for mayo.
